Bacon and Chicken Wrapped Asparagus

Ingredients:

  • 2 lbs boneless chicken – on sale at Price Chopper for $1.99/lb – cost $3.98
  • 12 asparagus stems, about ½ lb. – on sale at Price Chopper for $1.99/lb – cost $1
  • 6 slices of bacon – Hatfield smoked bacon on sale at Price Chopper for $3, used about half of the package $1.50
  • cheddar cheese, shredded, about 1 ½ cups – on sale at Aldi for $1.79 – cost about $1.35
  • garlic salt and pepper to season
  • toothpicks

Directions:

  1. Preheat oven to 375.
  2. Butterfly cut chicken in half. If needed after butterflying, pound chicken to 1/4inch thickness.
  3. Season with garlic salt and pepper. Sprinkle on some of the cheese.
  4. Cut asparagus in half and place four pieces on chicken.
  5. Roll chicken around asparagus and wrap each roll with a bacon strip. Secure with a toothpick.
  6. Place in a baking dish and cook for approximately 30 minutes.
  7. Transfer to broiler for about 5 minutes to crisp up bacon.

Served with a side of pasta (Mueller’s pasta 2/$1 at Price Chopper with in ad coupon and use $0.55/1 Mueller’s Pasta printable FREE) dressed with a little olive oil and a couple shakes of parmesan cheese.

Total $7.83

Slow Cooker Thai Peanut Pork with Red Peppers

 

Ingredients

  • 1 lb. boneless pork chops – on sale at Price Chopper buy one package get one free at $4.99/lb., purchased two 1 lb. packages – cost $2.50
  • 2 red bell peppers, thinly sliced – on sale at Price Chopper for $1.98/lb.- cost $2.25
  • 1/3 cup soy sauce –Price Chopper brand 10 oz bottle for $1.50 – cost about $.40
  • 1/3 cup chunky peanut butter –Always Save brand $1.79 for 18 oz. jar- cost about $.30
  • 2 tablespoons minced fresh ginger root – cost $.16
  • 1 cup chicken broth- used bouillon – cost $.04
  • 3 tablespoons honey – * I had honey in my cupboard and forgot to look at the store price, but I promise you that there is enough wiggle room in this weeks budget for the meal to get it.
  • 1 tablespoon minced garlic
  • ½ tsp red pepper flakes

Directions:

Are you ready for easy???  Toss everything in the crock pot and cook on low for 5 to 6 hours.  An hour before it is finished, remove lid so sauce thickens.

Serve with rice (cost about $0.50) and mixed vegetables (mixed frozen vegetables on sale at Price Chopper for $1.25).

 Total $7.40 (plus the cost of 3 tablespoons of honey)

Weekly Meal Plan – 2/12/12

I am a day late for my weekly meal plan this week – because well….I actually didn’t do one :( .  I have been so busy with taxes and my crazy week last week that I haven’t gotten around to clipping my coupons and when that happens I feel so overwhelmed, and can’t get to the grocery store on Sundays.  SO….I have yet to go grocery shopping and I figured that I would give you a peak at my weekly meal plan when I don’t get my grocery shopping done.

I have decided to skip the grocery store this week and just pick up some fruits and veggies from Aldi.  I am so happy about my 1/2 a cow purchase on weeks like this, I have a freezer full of meat and I don’t HAVE to go to the store :)

Monday – French Fries for me – Cereal for the kids…pretty bad huh?

Tuesday – Spaghetti for the kids, Mark is ordering me food from my favorite Gluten Free Restaurant and we will eat dinner at 8pm at home after the kids go to bed.

Wednesday Asian Style Country Ribs w/ Baked Potatoes and Corn (all things I have in the house phew….)

Thursday – Chili and Cornbread (all things I have in the house)

Friday – My husbands fabulous credential party for officially becoming an actuary – we are getting away for the night in Syracuse and my inlaws are watching the kiddos – yay!

Saturday – I have no idea what I am eating :)

So there ya go, my not so fabulous, I am potty training my daughter, and re-doing my bathroom, and blogging full time, and doing my business taxes all week MEAL PLAN! Voila!

Rosemary Chicken and Potatoes

Ingredients:

  • 8-10 pieces of chicken, thighs and drumsticks (about 3lbs) – $1.39/lb. at Price Chopper – cost $4.17
  • 6 red potatoes, quartered – Baby Reds on sale at Price Chopper, buy one get one free for $2.99 – cost about $1.00
  • ½ cup olive oil
  • 1 tablespoon rosemary
  • 1 ½ tsp oregano
  • 1 ½ tsp garlic powder

 

Directions

  1. Preheat the oven to 375.
  2. Put the chicken pieces and potatoes in a large bowl.
  3. Pour olive oil over them and toss to coat.
  4. Scatter the chicken and potatoes onto a large cookie sheet with sides.
  5. Sprinkle with the spices.
  6. Bake for an hour.
  7. Baste during the last 15 minutes for extra crispiness.
  8. Served with a side of corn.

Cooking with the FREE & Cheap – Crockpot Buffalo Chicken with Dairy Free Ranch Dressing Mix.

This weeks Cooking with the FREE & Cheap Recipes is Crockpot Buffalo Chicken with a bonus recipe of Ranch Dressing Mix (Dairy Free).

Ranch Dressing Mix and Crock pot Buffalo Chicken

My sister emailed me this great recipe for crock pot buffalo chicken. Easy and delicious and with the super bowl a few days away…right up my alley! There was only one minor problem, the recipe called for ranch dip mix. This was a problem because I’m currently eating dairy free and all the packaged dip mixes I could find had dairy in them. So, after some “googling”, I found a bunch of dairy free mixes. I was amazed at how easy and cheap they were. AND….I had all the ingredients in the cupboard so I didn’t have to spend any money on the dip mix.

Ranch seasoning mix (Dairy Free): - Thanks Heavenly Homemakers!

Ingredients:

  • 5 tablespoons dried minced onions
  • 2 tablespoons and 1 teaspoon parsley
  • 4 teaspoons salt
  • 1 teaspoon garlic powder
  • Mix together and store in an air tight container.

For dressing: Mix 2 tablespoons dry mix with 1 cup mayonnaise and 1 cup buttermilk or sour cream.
For dip: Mix 2 tablespoons dry mix with 2 cups sour cream.

  • *spices to make this would maybe cost you $2.50. This is equal to about 4 seasoning packets, which cost about $1.50 each!!!

Crock pot Buffalo Chicken:

Ingredients:

  • 3 lbs. Boneless chicken breast, frozen – on sale at Big M for $1.78/lb.- cost $5.34
  • 1 bottle Frank’s Buffalo Wing Sauce – on sale at Tops for $2, use $0.75/1 Franks Redhot Sauce, exp. 3/31/12 (SS 01/22/12 R) – cost $0.50
  • 2 tablespoons ranch seasoning mix – cost about $0.63

Directions:

  1. Toss everything in the crock pot, cook on low for 6 hours. Shred chicken and cook for an extra hour.
  2. I served it as a sandwich on rolls (from Aldi – cost $0.79) with salad (Dole salad blends, buy one get 2 free – cost $1.33).

You could also use the chicken in wraps or grab some of the pizza dough on sale and make yourself a buffalo chicken pizza!!! Enjoy!

Total: $8.59

City Chicken

Ingredients

  • 2 lbs boneless pork, cut into cubes – Price Chopper boneless pork chops on sale, buy one package get one free at $4.99/lb.  – cost $4.99
  • 1 envelope onion soup mix – Clear value brand $0.39
  • 2 cups chicken broth – used bouillon, cost $0.08
  • ½ cup all purpose flour
  • ½ tsp. garlic salt
  • ¼ tsp pepper
  • ¼ cup butter- cost $0.25
  • 1 cup water
  • Wooden skewers – large package available at the dollar store, only need 8, cost about $0.50
  • *optional, flour or cornstarch for making gravy

 

Directions

  1. Thread pork on wooden skewers.
  2. Combine flour, garlic salt, and pepper on plate; roll kabobs in the flour mix.
  3. In a large skillet (you will most likely either need to trim your skewers or use an electric skillet, as the regular skewer length does not fit in most skillets) melt butter over medium heat.
  4. Brown kabobs, turning frequently.  I did 4 at a time.
  5. Drain the grease from the pan.  Place all kabobs back in the pan and sprinkle onion soup mix on top.  Add broth and water.
  6. Reduce heat, cover and simmer for 1 hour or until tender.
  7. Remove kabobs and keep warm.  If desired, thicken the pan juices to make gravy.

Served it with homemade mashed potatoes ($2.50) and a can of green beans ($0.40) and all plates were practically licked clean!!!

There is a new $0.50/2 Pace Salsa coupon that came out.  One of my favorite recipes is Salsa chicken, here is a super easy crockpot recipe to use along with this coupon:

Salsa Chicken made with Pace Salsa:

Ingredients:

  • 1 lb.Boneless Skinless Chicken Breast
  • 1 Jar Pace Salsa
  • 1 can of Corn (optional)

Directions:

  1. Put chicken in Crockpot, put entire jar of Salsa on top and add can of corn.
  2. Shred chicken after it is done cooking.
  3. Serve over White Rice, top with Sour Cream and Sliced Avacado
