Pepper Steak Sandwiches

Ingredients

  • 1 lb Angus Sandwich steak, cut into strips – on sale at Price Chopper for $4.99/lb.
  • 1 green pepper – cost about $1.00
  • ½ an onion cut into thin strips- cost about $0.50
  • 2 tsp minced garlic
  • 2 – 3 tablespoons olive oil
  • ½ tsp salt
  • ¼ tsp pepper
  • Freihofer hot dog buns – on sale at Price Chopper for $1.00 with isave coupon
  • cheese (optional)

Directions

  1. In a large saute pan heat oil. Add the green peppers, onion, and garlic and heat until vegetables are tender.
  2. Add the steak, pepper, and salt and heat until steak is cooked.
  3. Toast the hot dog buns.
  4. Place the steak mixture in the bun and top with cheese if desired.

Oven Roasted Potatoes

Ingredients

  • 3 lbs. Potatoes cut into small pieces.- white potatoes on sale at my local farm market 10lb/$2.50 – cost $0.75
  • Olive oil
  • garlic salt
  • pepper

Directions

  1. Preheat oven to 450 degrees.
  2. Place potatoes on a large cookie sheet with sides.
  3. Coat and toss with olive oil. Season with garlic salt and pepper.
  4. Cook for 30 minutes, flipping half way through.

Total – $8.24

I’m an Irish gal.  My maiden name even started with “Mc”.  But I’ve never liked corned beef and cabbage.  With St. Patty’s day on Saturday I wanted to make a meal that celebrated my Irish heritage and I actually enjoyed.  So here it is Shepherd’s Pie.  This meal can be made gluten free by simply substituting cornstarch for the flour.  Hope you enjoy!

Shepherd’s Pie

*recipe adapted from Alton Brown’s Shepherd’s Pie 

Ingredients:

Mashed Potato Topping

  • 1 ½ lbs potato- I used red potatoes, on sale at Aldi for $1.49 for a 5lb bag – cost $0.45
  • 1/4 cup half-and-half -$0.50
  • 2 ounces unsalted butter – $0.25
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 egg yolk
  • * I didn’t use this part of the recipe because we have egg and dairy allergies in our home, but boy does it sound AMAZING!!!!

For the meat filling:

  • 2 tablespoons canola oil
  • 1 cup chopped onion- cost about $0.75
  • 2 carrots, peeled and diced small – $.59 for a 2 lb bag at Aldi – cost $0.10
  • 2 cloves garlic, minced
  • 1 1/2 pounds lean ground round – on sale at Price Chopper for $2.99/lb – cost $4.50
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons all-purpose flour
  • 2 teaspoons tomato paste – small can $.50 at Price Chopper – cost $0.05
  • 1 cup chicken broth – used bouillon, cost $0.04
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon rosemary
  • 1/2 teaspoon thyme
  • 1 cup frozen mixed vegetable – Price Chopper brand $1.25 – cost $0.63
Directions:
  1. Cut the potatoes into quarters, place them in a medium saucepan and cover with water.
  2. Boil the potatoes until you can easily poke a fork through them and drain.
  3. In a microwave safe dish heat the half and half and butter until melted.
  4. Mash the potatoes and mix in the half and half, butter, salt and pepper until smooth. Stir in the yolk until well combined.
  5. Preheat the oven to 400 degrees.
  6. While the potatoes are cooking, prepare the filling.
  7. Heat the oil into a 12-inch saute pan and over medium high heat.
  8. Once the oil is hot, add the onion and carrots and saute just for about five minutes. Add the garlic and cook another minute.
  9. Add the beef, salt and pepper and cook until browned and cooked through.  Stir in the flour and cook for another minute.
  10. Add the tomato paste, chicken broth, Worcestershire, rosemary, thyme, and stir.
  11. Bring to a boil, reduce the heat to low, cover and simmer until the sauce is of gravy like consistency.
  12. Add the frozen veggies to the beef mixture and spread evenly into an 11 by 7-inch glass baking dish.
  13. Spread the mashed potatoes across the top of the meat. Bake for 25 minutes.
  14. Let stand for 10 minutes before serving.

Total:  $7.27

Weekly Meal Plan – 3/12/12

My meal plan this week I planned while on my iPhone, sitting in my van, before heading into the grocery store.  This is something I would NOT recommend  doing :) , but I had just gotten back into town from being away all weekend visiting my new nephew and I didn’t have time to plan it until then.

Planning a menu is pretty easy when you have all the meat in your home already – so this trip was just about picking up some extra supplies to actually turn those frozen bricks of meat into meals.  I have entrusted the help of my handy dandy crockpot this week, as well as my own Cooking with the FREE & Cheap Recipe Series.

Here is what we are eating this week:

Monday – Wegmans Gluten Free Chicken Nuggets w/ Rice and Corn (I actually had a Shamrock Shake for dinner since I was going grocery shopping, then left my husband to put the kids to sleep )

Buffalo Chicken Pizza

Ingredients:

  • Pizza dough – on sale at Price Chopper buy one @ $1.99 get two free – cost $0.67
  • 1 lb. of chicken, cooked and shredded – boneless chicken breast on sale at Price Chopper for $1.99/lb – cost $1.99
  • 8 oz shredded mozzarella cheese – cost $2.00
  • 3/4 cup bleu cheese or ranch dressing – Price Chopper brand $1.69 a bottle – cost $0.85*
  • ¾ cup hot sauce – Crystal hot sauce on sale at Price Chopper buy one at $1.89, get one free – cost $0.47

 

Directions

Mix shredded chicken with hot sauce and shake to coat.   Roll out pizza dough and spread bleu cheese on top.  Place chicken coated in hot sauce on top of that.  Top with mozzarella cheese.  Cook pizza at 415 degrees for about 20 minutes or until cheese is browned.

Serve with a salad (Dole salad mixes on sale at Price Chopper for $2.50) and enjoy!!!

*I think there are some good dressing deals going on if you use doublers at Price Chopper, so check out some of the other brands.

Total Cost –  $8.48

Chicken Parmesan Meatloaf
*adapted from What’s Cookin’ Chicago?

Ingredients:

  • 1 ½ lb. Ground chicken – Perdue ground chicken on sale at Price Chopper for $3/lb- cost $4.50
  • 2 eggs- cost about $0.25
  • 1/3 cup breadcrumbs – cost about $0.25
  • 1 cup onion – cost about $0.75
  • 3/4 cup grated Parmesan cheese- cost about $0.75
  • 1/2 cup pasta sauce (homemade or store bought)- Hunt’s brand on sale at Price Chopper for $1- cost about $0.20
  • 1/2 cup shredded mozzarella – cost about $1.00
  • 3/4 teaspoon dried basil
  • 3/4 teaspoon dried thyme
  • 3/4 teaspoon dried oregano
  • 3 cloves minced garlic
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground black pepper

Direction:

  1. Preheat the oven to 350 degrees. Lightly grease a loaf pan with cooking spray, set aside.
  2. In a large bowl, combine the ground chicken, egg, breadcrumbs, thyme, oregano, basil, garlic, onion, salt, pepper and Parmesan cheese. Try not to over handle the mixture otherwise it will get tough.
  3. Place the mixture in the greased loaf pan and form into a loaf. Top the meatloaf with pasta sauce.
  4. Place filled loaf pan on a baking sheet and bake in the preheated oven for 50 -60 minutes. Remove the meatloaf from the oven and sprinkle the top with the remaining shredded cheese. Place the meatloaf back in the oven and bake until the cheese is melted, about 5 minutes.
  5. Remove the meatloaf from the oven and allow to rest for 5-10 minutes before serving.

Served this with mashed potatoes (10lb bag on sale at my local farm market for $2.50 – used 2lbs of potatoes – cost $0.50) and broccoli ( Price Chopper frozen broccoli on sale for $1.69)

Bacon and Chicken Wrapped Asparagus

Ingredients:

  • 2 lbs boneless chicken – on sale at Price Chopper for $1.99/lb – cost $3.98
  • 12 asparagus stems, about ½ lb. – on sale at Price Chopper for $1.99/lb – cost $1
  • 6 slices of bacon – Hatfield smoked bacon on sale at Price Chopper for $3, used about half of the package $1.50
  • cheddar cheese, shredded, about 1 ½ cups – on sale at Aldi for $1.79 – cost about $1.35
  • garlic salt and pepper to season
  • toothpicks

Directions:

  1. Preheat oven to 375.
  2. Butterfly cut chicken in half. If needed after butterflying, pound chicken to 1/4inch thickness.
  3. Season with garlic salt and pepper. Sprinkle on some of the cheese.
  4. Cut asparagus in half and place four pieces on chicken.
  5. Roll chicken around asparagus and wrap each roll with a bacon strip. Secure with a toothpick.
  6. Place in a baking dish and cook for approximately 30 minutes.
  7. Transfer to broiler for about 5 minutes to crisp up bacon.

Served with a side of pasta (Mueller’s pasta 2/$1 at Price Chopper with in ad coupon and use $0.55/1 Mueller’s Pasta printable FREE) dressed with a little olive oil and a couple shakes of parmesan cheese.
