My New favorite Gluten Free Recipe – Slow Cooker Shredded Beef Korean Tacos!

I tried a new recipe this week from one of my favorite food blog that combines two things that I LOVE – Eating Gluten Free and Slow Cookers!

This was THE best dinner that I have had in a very long time, Slow Cooker Shredded Beef Korean Tacos served on Rice Tortillas (I used the Food for Life Brand from Wegmans), with a side of brown rice!  It took me about 10 minutes to put together in the crockpot at 8am, and it cooked on low all day long.

I ate it again for dinner tonight because it was just so good!  We used a Bone-In Chuck Roast from the 1/2 of cow that we purchased a few months ago, and OH MY GOODNESS!

My Gluten Free Experiment – Gluten Free Beef Potstickers!

I posted on my Facebook Page last night that I was making Gluten Free Beef Potstickers for dinner – and wanted to let you all know how they turned out.  It took me 3 hours – YES 3 hours to complete them.  The first time I made the dough, I made it too dry that it wouldn’t roll out thin enough, then I made them too small and the wrong shape. I even had to search on You Tube ‘How to make Potstickers’….I have no shame that these were the first ones I have made.

I am getting pretty sick of eating the same things all the time, so I purchase myself this cookbook on Amazon called Gluten Free on a Shoestring.  It is a great book which talks about eating cheap while eating Gluten Free, this was my first first experiment with one of the recipes and it was great in the end.  I used Better Batter Flour to make these Beef Potstickers, and Organic Grass Fed Beef that we got butchered on our own a few months ago.

I was able to make 3 dozen Postickers – we ate half to them last night and I was able to freeze the other half for a quick and easy dinner for another time.  They were AMAZING, I felt like I was eating a fresh Ravioli with Asian Beef inside.  The best part is that my husband and kids LOVED them!  Mark said that they didn’t even taste Gluten Free, which is AMAZING because he is usually a picky eater.

I have been struggling trying to find recipes to cook and one of my New Years Resolutions this year is to set aside 1 hour a day to try a new recipe.

Note: DO NOT try this when all 3 of your kids are running around.  I nearly started crying after having to remove my 2 year old from playing with my flour the 100th time…..Does she not know that 1/2 cup of GF flour costs about $1,000???

Gluten Free Pumpkin Bread Recipe!

I am so excited to share with you my Gluten Free Pumpkin Bread Recipe, which is one of my favorite fall foods!   After finding out I had a gluten intolerance issue, the first thing I thought about was my favorite Pumpkin Bread Recipe.  Yesterday, I decided that I would try to make a gluten free version of my favorite recipe by Tammy’s Recipes.

I am so happy that it turned out AMAZING!  The only difference is that it is a little denser than my traditional recipe, however the flavor and texture is just the same!  This recipe was adapted by my favorite Pumpkin Bread recipe that you can find here.  This recipe makes 2 loaves.

Gluten Free Pumpkin Bread:

Ingredients:

  • 3 cups of sugar (you can use less than this if you want, I use the full 3 cups because I love how sweet it is!)
  • 1 cup applesauce (you can also use any type of oil you have on hand)
  • 3 eggs
  • 2/3 cup water
  • 1 – 15 oz. can pumpkin puree (around 2 cups if using fresh pumpkin)
  • 3 cups Gluten Free flour (I used 2 1/2 cups of Pamela’s Baking Mix and 1/2 cup of Chick Pea Flour)
  • 2 tsp. cinnamon
  • 1 1/2 tsp. salt
  • 1 tsp. nutmeg
  • 2 tsp. baking soda
  • 1 Tbsp. baking powder

Directions:

  • Preheat oven to 350 degrees
  • Combine sugar, oil and eggs.  Then add pumpkin and water, stir until combined.
  • In a separate mixing bowl add all the dry ingredients together.
  • Add dry ingredients to pumpkin mixture slowly, combine until smooth
  • Pour into (2) greased loaf pans.
  • Bake at 350 for 75 minutes or until bread tests done.

Now back to the recipe!

My favorite part of fall is apple season, here in New York there are apples everywhere!  You can go and pick HUGE bags of apples for only $10, so I think of every and any way to use them.  My absolute favorite recipe of fall is Warm Apple Crisp with Vanilla Ice Cream, I had to figure out a way to make my favorite desert Gluten Free so I altered my previous recipes and it was DELICIOUS!

Here is my recipe:

Ingredients:

  • 4-5 large apples cut in thin slices
  • 1/4 cup Orange Juice (the secret ingredient :) )
  • 1 cup sugar (you can alter this depending on how sweet you want it.)
  • 1/2 cup Bob’s Red Mill Gluten Free Oats
  • 3/4 cup Pamela’s Baking/Pancake mix
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • dash salt
  • 1/2 cup butter (1 stick)
  • *If you would like to make this the original way, just substitute flour for the Pamela’s Baking Mix and regular quick oats for the Gluten Free Oats.

Directions:

1.)  Preheat over to 375 degrees.

2.)  Start with 4-5 large apples cut up and placed in a buttered pie dish.

3.)  Sprinkle apples with Orange Juice.

4.)  Combine dry ingredients and cut in 1/2 cup of butter until the dry mixture looks like above.  It should look like crumbles the size of peas (for lack of a better word.)

5.)  Place dry ingredients on top of apples in pie dish.

6.)  Bake for 40 minutes until light golden brown on top.

7.)  Serve with your favorite Gluten Free Ice Cream!
