This weeks Cooking with the FREE & Cheap Recipes is Bacon and Chicken Wrapped Asparagus for under $8.00!
Here on ‘I am THAT lady’ I want to show you that you can cook inexpensive and healthy meals for under $10. The prices were taken from my local grocery store but you should find comparable prices at your local store, you can print this recipe by hitting the print icon on the bottom of this post.
Bacon and Chicken Wrapped Asparagus
Ingredients:
- 2 lbs boneless chicken – on sale at Price Chopper for $1.99/lb – cost $3.98
- 12 asparagus stems, about ½ lb. – on sale at Price Chopper for $1.99/lb – cost $1
- 6 slices of bacon – Hatfield smoked bacon on sale at Price Chopper for $3, used about half of the package $1.50
- cheddar cheese, shredded, about 1 ½ cups – on sale at Aldi for $1.79 – cost about $1.35
- garlic salt and pepper to season
- toothpicks
Directions:
- Preheat oven to 375.
- Butterfly cut chicken in half. If needed after butterflying, pound chicken to 1/4inch thickness.
- Season with garlic salt and pepper. Sprinkle on some of the cheese.
- Cut asparagus in half and place four pieces on chicken.
- Roll chicken around asparagus and wrap each roll with a bacon strip. Secure with a toothpick.
- Place in a baking dish and cook for approximately 30 minutes.
- Transfer to broiler for about 5 minutes to crisp up bacon.
Served with a side of pasta (Mueller’s pasta 2/$1 at Price Chopper with in ad coupon and use $0.55/1 Mueller’s Pasta printable FREE) dressed with a little olive oil and a couple shakes of parmesan cheese.
