Cheesy Chicken and Rice Casserole with Broccoli

Try this super easy slow cooker - cheesy chicken and broccoli dish!

This cheesy and chicken rice casserole is made right in your Slow Cooker, so it really is SO easy!

Cheesy Chicken and Rice Casserole with Broccoli
  • 1.5 lbs. boneless skinless chicken breast
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • ½ cup water
  • 1 tsp seasoned salt
  • 1 tsp black pepper
  • 1 cup milk
  • 8 oz. cheddar cheese, shredded
  • 1 bag frozen broccoli
  • 2 Tbsp butter
  • 2 Tbsp white all-purpose flour
  1. Combine cream of chicken soup, cream of mushroom soup, water and seasoned salt in slow cooker and mix well.
  2. Place chicken breasts in soup mixture.
  3. Cook over low for 4-5 hours.
  4. In a small sauce pan, melt butter over medium heat.
  5. Mix in flour and whisk continuously for about 5 minutes or until the roux turns slightly brown.
  6. Add milk and stir until thick and bubbly. Add cheddar cheese and stir until smooth.
  7. Pour cheese sauce into the slow-cooker and mix well.
  8. Cook broccoli as directed in the microwave, and mix into the slow-cooker.
  9. Slightly pull chicken into smaller chunks (if not already done so through stirring)
  10. Serve over white rice.

    How many oz. is a bag of broccoli? I buy the huge bag from BJ’s and that’s all I have! This looks yummy!

    What do you mean by “seasoned salt”? Will regular table salt work?

      Yes, regular table salt will work too.

    Do you add the cheese mixture after the 4-5 hour cook time?

    Can’t wait to try this – do you have any idea if this would freeze well? I live alone and that’s a lot of casserole – I’d probably eat on it all week :-) TFS

    Made this a few nights ago, it was really good! We used brown rice. And next time, I’ll probably use use less ‘cream of’ soup and more water; with the roux it ended up a bit too rich! Super easy though, will def make again.
