Healthy Stuffed Peppers – Crockpot Recipe

Are you looking for a recipe to make Healthy Stuffed Peppers?  Here is a favorite of ours that we make in our slow cooker, we prepare it right after lunch and we have a healthy dinner ready for us!

Slow - Cooker Healthy Stuffed Peppers
Serves: 4

  • 4 green bell peppers
  • 1 lb. ground turkey
  • 1 can crushed tomatoes (32 oz.)
  • 1 Tbsp dried basil
  • ¼ cup chopped onion
  • 1½ cups cooked rice
  • 2 tsp seasoned salt (divided)
  1. Combine ground turkey, onions, rice and 1 tsp seasoned salt and mix well.
  2. Chop off the tops and hollow out each pepper, removing all seeds.
  3. Evenly stuff each pepper with the turkey/rice mixture.
  4. Place stuffed peppers in the slow-cooker.
  5. Combine crushed tomatoes, basil and 1 tsp seasoned salt to make a sauce.
  6. Cover stuffed peppers and the bottom of the slow-cooker with the sauce.
  7. Cover and cook on low for 6-8 hours.

    For the Slow-Cooker Healthy Stuffed Peppers recipe, is the Ground Turkey Browned before stuffing in the Peppers? It looks yummy. I am going to try it this weekend.

      Thanks Amy. No, the turkey is not browned before stuffing. But it certainly couldn’t hurt if you wanted to do it this way.

    no one eats the pepper but we love the meat mixture with the sauce. do you think it would work if I just threw everything in the crockpot minus the pepper?

      if you cook it without the peppers it totally changes the flavor, and not for the better. Tried that once.

    I made this tonight and was disappointed. It was so bland! I followed the recipe exactly as it’s written. Hopefully the other recipes in this plan are delicious. Thank you for these awesome plans, it’s helped a bunch with my feeding my family for less.

      Bobbi – I am SO sorry that you didn’t like them. Did you use our sauce recipe to create them? If not, that might have been the issue.
