Easy slow-cooker roasting chicken recipe - set and forget and have a delicious meal waiting for you at home!

Here is one of our favorite week night recipe for using up a roasting chicken.  This is a super easy way to make dinner in just 5 minutes and have it ready for you when you either get home from work, or when it’s time for dinner.

This meals should cost you around $6.00 or less – so a very inexpensive meal too!

Easy Slow-Cooker Chicken

Serves: 6
  • 1 whole chicken
  • 2 medium carrots
  • 2 medium celery stalks
  • 1 medium sized onion
  • 1 Tbsp Kosher salt
  • 1 tsp Pepper
  • 1 tsp Sage
  • 1 Tbsp Thyme
  • Water
  1. Rinse the chicken and remove giblets.
  2. Mix salt, pepper, sage and thyme and rub all over the chicken.
  3. Chop all the vegetables
  4. Place the chicken in the slow-cooker with vegetables, and pour in enough water to fill the bottom of the slow-cooker to about an inch.
  5. Cook for 6 hours.

      Hi Brenda, you could serve it with whatever you’d like. For the Aldi slow cooker meal plan, I had suggested baked potato and green beans as a side.

    Just to let you know, you don’t want to rinse a chicken. It actually causes more germs to be strewn around your kitchen. The recipe sounds good!

    How long will your meal plan last for one person that eats 5 times a day at a max. of 500 calories each meal? Please respond. I’m so sick of eating the same old meals for my workout diet. Yuck!

    How do you get the chicken to not fall apart? Tastes wonderful and super tender but fell apart!:(

      Shelly – most meats that are made in the crockpot fall apart due to the length of cooking time. We have a recipe coming up soon for a roasted chicken, which is made in the oven and does not fall apart.

    This is delicious! My 1 and 3 year old boys love it as well. They especially love the cooked carrots, even though they normally hate carrots. So I will definitely add more carrots next time. Thanks so much for the recipe!
